uncooked rice
1 carrot, chopped
1 carrot, chopped

scallions, thinly sliced
½ cup red
pepper

teaspoons soy sauce

teaspoon fresh ginger, minced

Directions:
Cook rice
according to directions. Cut the top off
of the pineapple (don’t discard). If you have a pineapple corer, core the
pineapple and discard. Carefully cut out as much of the pineapple as possible
leaving the exterior intact. Cut up the pineapple in 1 inch cubes.
Cut up
chicken breast and sauté in olive oil until fully cooked. Set aside. Add carrots and cook until
tender. Add scallions, red pepper,
ginger, pineapple, and soy sauce then cook for
3
minutes. Add rice and stir. Place the stir fry into the pineapple, replace the
top, and serve the surprise! Serves 4-6.
